The hyphen is at least as confusing as the quotation marks here, as well as the fact that this sign appears to be professionally made. Thanks, Joshua.

Tip: Having an engraved and painted wooden "out of order" sign tells people your stuff is broken a lot, making you look less competent.

I think "Don't-Touch" must be the name of the repairman. Or maybe you're not supposed to touch the repairman (as in "We called the repairman, but he's a "don't-touch" repairman...").

Close Erin, but i think it's a company name. A local DIFY (Do It FOR You, as opposed to DIY) service company, aptly named Don't Touch. As in: "Leave it the Hell alone before you make it worse. We're on our way...."
