Because, see, they're not really overstuffed. That would just be silly. They just want to make sure you realize how generous they are with the fillings. If they left off the QMs people might freak out! "I can't eat there! They overstuff their omelets! Think of the mess! What? Quotes? Oh! Phew, it's just an exaggeration. Well, that's a relief!"
There's also some humor in the fact that they are serving omlettes not omelettes or even omelets. Made me think of the Weird Al song, Amish Paradise. "I'm the pious guy the little Amlettes want to be like."
